Saag and veggies carries lot many vitamins,fiber or cholesterol control.
But our modern day food revolves around butter,junk food, too much of high heat generating items.
This food is good ,it has some much roots in culture .And remember cultural food is healthy.
This Item is dedicated to Lord Jagannath ji,Who is believed to be a lover of saag.
This I prepare on Thursday and Friday to offer Lord Jagannath and Devi Laxmi.
Along with white rice(kachhe chawal),and dalma(dal+ subji )
I here by give the non satvik version.but satvik version will be with out onion garlic. So it has chopped ginger and sukhi mirch, green chilli jeera and ghee.

Ingredients

2 servings
  1. 1 bundleAmaranthus leaves washed and finely cut..
  2. 1 cup Pumpkin cubed
  3. 1/2 cupPotato .two I added you can add eggplant,ridge gaurd,
  4. as required Ladies finger
  5. Chaunk
  6. 2Sukhi mirch-
  7. 4 garlic Cloves,
  8. 1 TSP panch foron.
  9. 1 TSP besan or atta,
  10. 1/4 cupUrad badip semi crushed
  11. as required salt to taste
  12. 1/2 TSP haldi

Steps

  1. 1

    First take a pan add oil 1 tbsp,add panch foron,sukhi mirch,add green chilli. garlic crushed
    Then add veggies oil fry it..
    Add salt and haldi,add finely cut saag saute it.

    Now cover. do it on low flame..add badi/wadi...

  3. 3

    For Punjabi friends of mine sarson da saag k time,you add hing and chilli powder..towards chaunk.Here you don't give that way....It's some thing different preparation but you will like it...the more times you prepare or frequency is more.
    Take it as a side dish for rice
