Is another Mary Berry Recipe I did learn on Netflix. From recordings of UK BBC TV Cookery Shows from only Mary Berry mainly.

Fry chopped onions in Olive Oil with the lid on - for 10 minutes on a lowest simmer.

After 10 minutes add the peeled scallop shaped potatoes and then slowly simmer with a lid on for about 20 minutes - during that 20 minutes add the chopped Red Pepper pieces if using and the chopped Parsley.

With about 30 minutes gone. Beat 4 whole hen eggs in a mixing bowl with a Dinner Fork - the beaten eggs should flow well through the gaps in the Dinner Fork - and then add the cooked ingredients within the Frying Pan etc. into the beaten eggs within the mixing bowl.

Add more Olive Oil too the Frying Pan etc. and then pour all the beaten egg mix into the Frying Pan and fry on the One side for 5 minutes and then place a Dinner Plate over the top of the Tortilla and then tip upside down - in order too place the other side of the Tortilla into the Frying Pan - might have too add another tablespoon of Olive Oil too the Frying Pan before placing the other side in. Fry for another 5 minutes and then serve.
Tips
Can use grated raw Potato - cook's quicker . Photo as above - I used grated raw Maris Piper Potatoes , did not cover too steam cook
