In a bowl, combine the eggs and sugar. Whisk until well blended. Add the remaining liquid ingredients and whisk again.

Once everything is fully combined, add the oat flour, baking powder, and cocoa powder. Mix until smooth, then fold in the oats. Use an ice cream scoop to fill the muffin cups. Bake in a preheated oven at 350°F (180°C) for about 30 minutes, depending on your oven. Check for doneness with a toothpick when you start to smell their aroma.

Let cool on a wire rack. They were a hit at home! They turn out very tasty 😋
