  4. 1/3medium carrot
  5. 1green onion
  6. Seasonings
  7. 2 tablespoonssoy sauce (30 ml)
  8. 1 tablespoonoyster sauce (15 ml)
  9. 1/2 tablespoonmirin (7 ml)
  10. 1 tablespoonrice wine (15 ml)
  11. 1 teaspoonsalt (5 ml)
  12. 1 tablespoonsugar (12 g)
  13. Black pepper, to taste
  14. Five-spice powder, to taste
  15. Minced garlic, to taste
  16. Ginger juice, to taste
  17. 1egg
  18. 2 tablespoonssweet potato starch (about 16 g)
  19. 7–10 napa cabbage leaves

    Finely chop the carrot and green onion. (A food processor makes this faster.) Add them to the ground pork.

    Add all the seasonings to the pork mixture and mix well by hand, kneading until sticky.

    Add the egg and 2 tablespoons sweet potato starch. Mix until fully combined.

    Continue kneading the pork mixture until it holds together and forms a cohesive filling.

    Cover with plastic wrap and refrigerate for 30 minutes to let the flavors develop.

    Wash the napa cabbage leaves, choosing the most intact ones.

    Bring a large wok or pot of water to a boil. Blanch the napa cabbage leaves until just softened, then remove.

    Lay out the cabbage leaves. Place some of the marinated pork filling about one-third of the way from the edge. Roll up the cabbage tightly and place on a plate.

    Place a steaming rack in a large wok or pot. Add enough water and bring to a gentle boil.

    Arrange the cabbage rolls on the rack, cover, and steam over medium heat for 25 minutes.
