This delicious and vibrant veg kadai gravy is filled with rich flavours, aromatic spices and vegetables. In a kadai add oil and fry the sliced onions till golden brown colour. Once cooled add into grinder along with the cashew nuts and grind it into a smooth paste with 3-4 tbsp water. And keep it aside

Now in a kadai add 2 tbsp oil and fry all vegetables (except capsicum and green peas) with 1/4 tsp turmeric powder and pinch of salt. Saute for 2-3 minutes and remove all sauteed vegetables onto a plate.

Now in same kadai add 3 tbsp oil and then add cumin seeds. Once it splutters add whole spices. Give a stir and then add ginger paste. Fry on low flame for 2 minutes till raw smell is gone.

Now add the tomato puree. Give a mix and cook on medium flame for 2-3 minutes till cooked and oil separate. Add the all spice powder and salt. Give a mix add chopped green chillies and cook on medium flame for 2-3 minute till oil separate.

Now add onion cashew nuts paste. Mix and cook for 2-3 minutes till oil separate.

Now add the sauteed vegetables and cubed capsicum and green peas. Mix and cook on medium flame for 3-4 minutes till the vegetables are coated well with the masala and oil separate.

Now add 1 cup water, give a mix and cover on low flame for 10-12 minutes till the vegetables are cooked and oil separate. Add the fresh cream and garam masala powder and kasuri methi. Give a mix and simmer for 2 minutes on low flame.

Garnish with Finely chopped coriander leaves with naan,roti or Paratha.
