In a Kadai heat oil, add in jeera, red chili, and let it splutter. Add in finely chopped garlic and ginger. Sauté until aromatic. Add in chopped onions and sauté until golden.

Add in potato cubes, and salt to help the potato cook. Cover and cook on low-medium flame stirring occasionally until potatoes are well cooked. Add in chopped tomatoes, cover, and cook until tomatoes are soft.

Add in spice powders, salt, and sauté for a minute.

Add in chopped palak, mix, cover, and cook further until palak is soft. Finally, add ghee and mix.

Winter Special Aloo Palak Sabji is ready to be served with roti and salad.
