Ingredients

  1. 1medium Romanesco cauliflower
  2. 3 tbspGreek yoghurt
  3. 1lime
  4. Sea salt
  5. Pepper
  6. Fresh parsley to garnish
  7. Chilli flakes to garnish (to taste)

Steps

  1. 1

    Steam Romanesco until tender. Remove and allow to cool completely.

    Mash well. Stir in yoghurt and spices. Squeeze over fresh lime. And serve with fresh parsley and chilli.
