Chop the green onion, garlic, and tomato into small pieces. Slice the sweet pepper into strips.

Heat the oil in a skillet over medium heat. Add the garlic and sweet pepper and sauté. Add the green onion and sauté. Add the tomato, stir, and cover until the tomato starts to release its juices.

Add the eggs and sprinkle with a pinch of salt and black pepper. Cover and cook until the eggs are done to your liking.
When the eggs are cooked, sprinkle with chopped cilantro.
