Greek Chicken and Potatoes

Add all the Lemon-Garlic Marinade ingredients in a mixing bowl and whisk to combine

Combine Lemon-Garlic Marinade with Chicken and 5 ml Salt in a container. Seal the container and place in refrigerator for 2 to 6 hours.

Preheat oven to 180° C.

Place the Potatoes and Onion in the bottom of an oiled baking tray. Season with Salt and Pepper.

Place the Chicken on the Potatoes and Onion. Pour the remaining Lemon-Garlic Marinade over the Chicken. Arrange the Lemon slices into of the Chicken.

Pour broth into the tray from one corner so as to not wash the Sauce from the Chicken.

Bake for 45 minutes until the Chicken and Potatoes are tender.
Add the Kalamata Olives and garnish with Parsley Leaves
