Pan-fried Stuffed Sardines

Today I had to cook some leftover Sardines Fillets. I was going to cook ‘Garlic & Panko Baked Sardines’, but it was just too hot to turn on the oven. I decided to cook them in a frying pan. I made the topping ingredients into stuffing, sandwiched it with the Sardine Fillets, and cooked with Olive Oil. This is another absolutely easy, quick and delicious recipe.
Pan-fried Stuffed Sardines

Combine all the Stuffing ingredients in a small bowl. Season very lightly with Salt & Pepper. You may wish to add no Salt at all as Parmesan is salty.

Season Sardine Fillets with Salt & Pepper very lightly. Sandwich the stuffing with two fillets.

Heat Olive Oil in a frying pan over medium heat, cook the stuffed Sardines until both sides are nicely browned and cooked though. Scatter with finely chopped Parsley and serve.
