Turkish Doner Kebab (Beef) or Turkish Shawarma 🥙

Cut the onion and garlic into quarters and add them to a food processor. Process until finely chopped.

Add the ground beef and beef fat to the onion mixture, then add the spices and salt. Mix for 2 minutes.

Add the olive oil and yogurt, and mix for 5-7 minutes until the mixture comes together and forms a dough-like consistency.

Place plastic wrap on a flat surface, transfer the mixture onto it, and shape it into a log. Wrap it tightly, then wrap again with aluminum foil and seal well.

Place the wrapped meat in the freezer for 2 hours to 2 days. You can keep it longer if needed. When ready to use, make sure the meat was fresh (not previously frozen) to avoid food safety issues.

After freezing (I left mine for 2 days), remove from the freezer.

Using a sharp knife, slice the meat very thinly.

Heat olive oil in a skillet over high heat. Add the meat slices in batches and sear for 1-2 minutes per side, just until cooked through.

Transfer the cooked meat to a bowl and repeat until all the meat is cooked.

In the same skillet, add the tomato sauce (after mixing all the sauce ingredients together).

Simmer the sauce for 5-10 minutes (add more water if the sauce reduces too much).

Return the meat slices to the sauce and let them simmer together for 3 minutes.

Top with chopped cilantro and yogurt sauce, and let them heat together for 2 minutes. Now it's ready.

Serve the doner in a sandwich with the sauce, French fries, any vegetables you like, and hot sauce to taste. You can also serve it with rice and eat with a fork if you prefer.
