Ingredients

4 servings
  1. 1/4 cupolive oil plus 1tbsp
  2. 80 gdried mango, soaked overnight in water to reconstitute
  3. 90 gcassava flour
  4. 90 gKing Arthur gluten free flour
  5. 1 tspbaking powder
  6. 3large eggs
  7. 225 ggranulated sugar
  8. 1/2 cupsour cream
  9. Zest of 1 orange
  10. 3 tbsplime juice
  11. Icing
  12. 83 gpowdered sugar
  13. 1 tbspwhole milk
  14. Flaky sea salt

Cooking Instructions

    Preheat oven to 350 degrees. Prepare the 8 by 4 inch loaf pan with parchment paper and brush with 1 tbsp oil

    In a food processor, puree mango. Then transfer mango puree to stand mixer.

    Add both flours, baking powder, turmeric, eggs, and sugar. Mix with paddle attachment on medium until well combined.

    Scrape down mixing bowl if necessary and add sour cream, orange zest, lime juice. Mix on low until combined.

    Pour mixture into the loaf pan and bake at 350 degrees for 50-60 minutes. A toothpick interested into the center should come out clean.

    Remove loaf from pan once cooled. Whisk together powdered sugar, whole milk, and sea salt until it thickens into icing and pour over loaf.
