This recipe calls for the use of orisirisi (assorted meat). I used Pomo( cow skin), Bokoto ( cowleg), offals ( shaki, roundabout) , cow tongue. I cooked them all till soft bear in mind that these proteins have different cooking time.

Steps

Wash your peppers and tomatoes. This stew calls for more pepper than tomato. Peel and slice onion. Blend to get a smooth paste.

In a pot, add your vegetable oil and palm oil. The ratio is equal. Heat a little but don't bleach. Add in your pepper paste. Stir fry.

Add your assorted meat. Add your seasonings to your taste. Add crayfish and iru (optional). Stir thoroughly. Add a little water or beef stock.

Lower your flame and allow to cook, stirring at intervals. Cook till oil rises to the surface.

Your iya Basira stew or buka stew is ready. You can add peeled hard boiled eggs to your stew. Serve with choice of food and enjoy.
