  1. 1 Cupshredded seasonal mixed salad leaves
  2. 1/4 cupfinely chopped red onion
  3. 1/4 cupToasted Pine nuts
  4. 6-8Cocktail tomatoes sliced in quarters
  5. 1/2 cupcrumbled Feta
  6. 1 CupFrozen Corn Kernels

Cooking Instructions

  1. 1

    Prepare the corn kernels by preheating a skillet and saute with a bit of butter until cooked and a bit caramelized

    Mix all ingredients together, serve with olive oil, balsamic reduction
