  • 4tomatoes
  • 1/2cucumber
  • 1red onion
  • 1 bunchfresh coriander
  • 1 pinchsalt
  • 1 dashlemon or lime

  1. 1

    Finely chop the tomatoes; cucumber; red onion and corriander then mix together in a bowl.

  2. 2

    Just before serving add the lemon and season with salt and toss together.

  3. 3

    Ingredients can be increased or reduced depending on serving. Great as side dish with main meal. Quick and simple!

That sounds great. I also add a little virgin olive oil. Since parsley is commonly available where I grew up we use that instead of corriander. Great side salad for any meal. Yummy. :-)
