Capsicum and Brinjal Curry

This is yet another yummy Veg dish made in my home. I had previously shared a dish with Eggs as well. But this one is entirely a Veg variation
It's simple yet absolutely filling. Goes well with both Phulkas and Parathas apart from the South Indian staple Rice of course.
With just a few ingredients, it's absolutely done in no time at all.
I have used Green Brinjal here. Any variety of it would taste just as delicious.
A perfect side dish to many important meals. It's a great one.
A lovely Lunchbox idea as well. Can be relished with simple Rotis at Lunch. A steaming hot plate of Rice with this side dish is pure love for me. A comfort food, by all means, I just love it.

In a pan, heat oil and add the ginger-garlic paste, and Green chilies. Saute for a minute and add the rest of the spices. Now add the sliced Onions. Saute until translucent. Also, add the Capsicums. Saute until nicely done. Also, add half of the chopped Coriander Leaves too.

Followed by the Brinjal or Eggplant. Cover and simmer on low heat for 20 minutes. Add some water as well. Open the lid after done and adjust Salt accordingly.

Saute until the oil starts separating. Garnish with lots of chopped Coriander Leaves. Serve hot as a side dish to your favorite meal. This is a lovely combination and tastes yum with both Rice and Rotis. Yum!
