Paccheri with Pumpkin Cream and Shrimp

Clean and wash the pumpkin, cut it into small cubes, and place it in a skillet with thinly sliced leek and a drizzle of olive oil. Add a little water, salt, and pepper, and cook for about 15 minutes.

Clean the shrimp and sauté them in a skillet with olive oil and chopped garlic. Season with salt and cook for 5 minutes.

When the pumpkin is ready, drain any excess liquid, transfer it to a blender with the cream cheese, and blend until smooth.

Cook the pasta, then toss it with the pumpkin cream and shrimp. Serve garnished with chopped parsley.
