The veg Thukpa soup is one among the popular noodle soups in India . This himalayan noodle soup is healthy, hearty & so yummy.
It originated in the eastern part of Tibet .The dish became popular in Nepal , Bhutan & the states of Sikkim, Assam & Arunachal pradesh in Northeast India. it is also popular in the Ladakh region & the state of Himachal Pradesh .
This soup also has its roots in China .

Steps

Firstly chop all the veggies very finely. Boil noodles n keep aside.

Heat oil in a-big pan. Add ginger, garlic & chilli to it. cook for a minute.

Add onion & saute it. then add carrot, cabbage, beans & spring onion. cook for 5 mins.

Then add sauces, spices & stir well.

Add water to it & cook till one boil.

Then add spinach, lime juice to it & cook for 3-4 boils. Switch off the flame.

Take some noodles in a bowl & pour the thukpa soup in/on it.

Garnish with green part of spring onion & enjoy hot soupy noodles.
