Ingredients

  • 1/4 cuppumpkin seeds
  • 1/2 cuprolled oats
  • 1heaped tbsp hazelnuts
  • 2level tbsp flaxseeds
  • 1 tspchia seeds
  • 1heaped tbsp psyllium husk
  • Pinchsalt
  • 1/2 tspseaweed flakes
  • Optional: A pinch/ 1/2 tsp of your ground spice of choice can be added eg cumin
  • 1/3 cupwater
  • 2 tspcoconut oil, melted
  • 1 tsprunny honey

Steps

  1. 1

    Preheat oven to 170c.

  2. 2

    Use a food processor to blitz the pumpkin seeds, oats and hazelnuts. Or for this small amt, i use a spice grinder.

  3. 3

    Add the flaxseeds and chia and psyllium husk and salt and seaweed. Mix.

    Add the liquids and mix well until it comes together as a dough. (If you’re using a food processor, do it in that but it’s also super-easy by hand.) Let it rest for 5-10 mins.

    Roll out to 2-3 mm thick. Cut out rounds. Roll and cut until it’s all used.

  6. 6

    Lay the rounds on a lined baking tray. They don’t need a lot of space.

    Bake for 30mins. Turn them then bake for another 15-20mins. Until golden brown.
