It's creamy, fragrant and sweet. Lemon curd goes well with scones, crepes, bread, pound cake, yogurt, ice cream and so much more!
An important point to make lemon curd is to never cook on direct heat. Cook the lemon curd in a double boiler and the hot water temperature should be around 80℃.
Please store the lemon curd in the fridge and it is best to finish eating within 3 days.

Crack the eggs and stir well with chopsticks.

Make lemon zest. Only shave the yellow rind, as the white part of the lemon is bitter.

Measure butter and melt it in a double boiler.

Add granulated sugar to the egg mixture and mix well. Squeeze the lemon juice through a sieve to remove the seeds and add to the bowl. Add melted butter too.

Boil hot water in a small pan, place the bowl with lemon curd mixture on it. Keep the hot water temperature around 80℃. Using a silicone whisk and mix it until completely blended, then continue to whisk as the curd gets thicker. Constant whisking prevents the eggs from curdling. Keep doing this for 10 minutes.

Add lemon zest once the lemon curd is thick enough and remove the bowl from the pan.
