Soak 2 cups of beans in water until soft & skin slightly removes when squeezed then pound to remove skin off wash & continue rinsing while picking out the skin & washing it away.

Then wash & remove seeds from the red bell pepper, scotch pepper & onion. Chop them & add them into the beans. Peel garlic & add then add cray fish which is optional & can be omitted if you don’t want your moi-moi to be dark, but tastes great with it😋

Then take it for grinding or use your blender if it’s super sharp to crush the beans well then add in some oil, seasonings like maggi, salt, or onga then add in spice like curry, thyme or any spice of choice.

Stir every thing well add into a leather, tie & cook in hot water until it hardens not too soft, does not easily crumble & well cooked then serve & enjoy.!🍽😋😋
