Wash the egg plant, slit it a bit and check for any unwanted/unpleasant stuff inside it. Roast it over the charcoal all around till the skin looks crunchy. Peel off the skin. Alternatively, you can roast it in the oven, but that will not taste as good.

Mash it very well. Add the rest of the ingredients, combine well and it's ready!

Take it out in a serving bowl. Lay it evenly and then make some circular depth using the back of the spoon. Pour some olive oil in the depth. You can also garnish it with some olives, tomatoes, onions etc.
