Wash and soak urad dal for minimum 2hrs

Drain all water

Grind to smooth paste,if required add half cup of water

Transfer in a mixing bowl

Add salt, pepper and chopped curry leaves

Meanwhile keep oil ready for deep frying

Pour batter in medu vada maker

Make vada directly in oil, by pressing the vada maker only for 3-4 seconds (for each vada)

Fry till golden and Crispy

Keep aside

Now wash and cook toor dal in the pressure cooker

For making sambar

Heat oil in a kadhai

Add Mustard seeds and cumin

Add red chillies and Curry leaves

Now add chopped onion

Saute for 1min

Now add all finely chopped vegetables

Add all dry spices

Mix everything well

Cover and cook for 5-7 min till vegetables get cooked

Niw pour cooked dal

Add tamarind paste and jaggery

Add water to adjust Sambar consistency and Cook for 3-4 min on low flame

Sprinkle chopped coriander leaves

Serve hot sambar with hot medu vada
