Trying to learn how to make Spanish tortilla and lighten up lunch at the start of the year, I decided to give it a try. Hope it turns out well! 😊

Peel the potatoes and slice them very thin.

Heat the butter and oil in a skillet. Add the potatoes and lower the heat to cook them gently without browning.

Meanwhile, slice the onion into half-moons and crack the eggs into a bowl. Mix the eggs well, but do not beat them completely.

Once the potatoes are ready, transfer them to the bowl with the eggs. In the same skillet, sauté the onions until softened.

Pour the egg and potato mixture into the skillet. Add salt and pepper to taste (you can also add a bit of herbs if you like). Cover and cook over very low heat. When almost set, use a plate to flip the tortilla and cook until done to your liking.

Cut into slices and serve with wine or beer. I served it with a little onion jam or, in Mexican style, with salsa. It turned out delicious! You can try adding your own twist, like bacon, ham, or vegetables. 😋🤤 Hope you enjoy it! 🐬💞
