Gather your ingredients, then peel and roughly chop the carrots, onion and garlic.

Add the carrots, garlic, onion, ground coriander, salt and pepper to a pot with the chicken stock and bring to a boil for 15 minutes

After the vegetables have softened nicely, transfer the contents of the pot to a mixer and run for 2 minutes, or until the soup is nice and smooth. Add water if needed to get the consistency you prefer.

Return a portion of the puréed soup to a pan and warm well. Serve with the fresh coriander on top. Salt and pepper to taste.
