Cooking Instructions
- 1
Boil the potatoes in a large pot for about 20 minutes until tender and can easily be pierced with a fork. After cooked, strain and return to pot. Peel the potatoes if you don’t like the skin. Turn off all heat.
- 2
Cook the bacon during the last 5 minutes of potatoes cooking. Make it crispy.
- 3
Drizzle some olive oil over the potatoes and add salt, pepper, minced garlic and stir gently making sure not to mash the potatoes. Turn burner on to low heat.
- 4
Top the potatoes with crushed pieces of bacon and cheddar cheese then cover with a lid until cheese is melted. Turn heat off and serve.
- 5
Top with chives and any other fresh vegetables you’d like. I like to serve with a side of sour cream and chipotle Tabasco mixed. Enjoy!

Thought I'd give a Crockpot loaded potato soup a try since I work long hours and am famished when I get home! Plus, most recipes call for a roux to be made, I wanted simplicity! This turned out great! My boyfriend devoured 3 bowls! VERY EASY AND QUICK to set up! I got inspired by a few recipes and added my own little spin. Enjoy! Carolyn -
Fully Loaded Baked Potato Soup Fully Loaded Baked Potato Soup
I make this when the weather starts to turn cold.A couple of notes on preparation:••• I like to make this on the first cold days of the year. It's hearty and warming and delicious. ••• If the soup gets too thick while it boils, add a little milk and let it cook in for a minute. If it gets too runny, mix some flour and a small amount of half and half in a separate container, and pour that into the soup instead. I like it thick, but this could easily become gravy by accident. Also, consider the fat content of a meal made with a pint of half and half. You can use milk instead, but the soup will be less creamy and flavorful. You can use whole cream to make it really rich, but this is really too thick. A good compromise is to mix half and half with milk if you wish to decrease fat content while retaining texture.GradysGhost
