Rinse the rice and soak it for 30 minutes. Then, in a pot, cook the rice with water and a pinch of turmeric. Make sure not to overcook the rice; when it's half-cooked, drain and set aside.

Heat ghee in a pan. Add cardamom, cloves, cinnamon, and bay leaf, and sauté for a few seconds. Add the half-cooked rice and sugar, and mix well.

Add saffron soaked in milk and stir continuously.

Mix well and keep stirring. When the ghee starts to separate from the sides, add some of the sliced almonds and pistachios, saving a few for garnish.

Transfer to a plate, garnish with the remaining almonds and pistachios, and serve.
