Kimchi, is a traditional Korean side dish of salted and fermented vegetables, such as napa cabbage and Korean radish. A wide selection of seasonings are used, including gochugaru, spring onions, garlic, ginger, and jeotgal, etc.
There are hundreds of different types of kimchi made with different vegetables as the main ingredients.

Cut cabbage into 4 parts from stalk.
Put cabbage in a large bowl and add water and salt. Allow the cabbage to soften for two hours.
Through out half of the salted water. - 2
After that, cut carrot, scallion, radish,onion and red pepper into 5 cm sticks and add to the bowl.
Mix ginger, cooked rice and garlic until smooth.
Add it to vegetables. Then add paprika powder and soy or fish sauce. - 3
Stir all ingredients. Cover and Leave for two to 7 days at room temperature and in a dark place to ferment.

It will bubble after fermentation and it's time to refrigerate it.
It's delicious and can be served as a side dish.
