Today I have made simple curd rice with leftover rice. This is quick, simple, easy and no cooking recipe perfect for summer. Rice mixed with plain yogurt and finally tempered with mustard seeds and curry leaves. Pomegranate pearls add an extra zing to it .
It is easiest way to consume the leftover rice.

Take leftover rice in a bowl and mash lightly, then add curd, salt, green chilli and milk and mix it well.

Heat oil in a tadka pan add mustard seeds and let it splutter, add urad dal, hing and saute for a minute. Reduce heat, add curry leaves and dried red chilli. Switch off the flame and add the tempering to rice and mix it well.

Chill in the fridge. Transfer into a serving dish, sprinkle some pomegranate pearls and serve.
