Eggplant and Raw Banana Curry

One more easily done dish for mealtimes on any day. It's another yummy variation of Brinjal or Baingan but it's in combination with Raw Banana this time.
Isn't that lovely?
It's absolutely tempting and both the Vegetables pair so well. It goes well with both Phulkas and Parathas. And even the favourite of South Indians- Rice.
It's done very quickly and without any hassles. Simple pantry staples go into making this one.
In this particular one, I have used the Green Brinjal or Eggplants. You can use any variety that's handy. It will make no difference at all.
In Ramadan, it's absolutely delightful for Suhoor.
It's quite obvious that early morning meals are a bit difficult, but with these and other yummy Vegetarian version of Curries are always a welcome sight.
I enjoy these simple Comfort meal on every single day for Suhoor.

In a pan, heat oil and add the ginger-garlic paste, and Green chilies. Saute for a minute and add the rest of the spices. Now add the sliced Onions. Saute until translucent. Now add Brinjal cubes to it. Saute until nicely done. Also, add half of the chopped Coriander Leaves too. Add half a cup of water too.

Cook on a low heat for 10-12 minutes with a lid on. Now add cubed Raw Bananas. Mix well and cook for about 10-12 minutes more or as required.

Half way through the cooking process, check for Salt once. Add rest of the chopped Coriander Leaves. Adjust Salt accordingly. Cook for a further 5-6 minutes more. It should be done on a low heat only. Never do it on a high heat. Slow cooking makes it more flavourful and mouthwatering.

It's time to dish out now. Enjoy with simple homemade Rotis or Chapatis or even Phulkas. Or even with a steaming hot plate of simple boiled Rice. Yum!
