Another most simple yet flavourful Curry for Suhoor this Ramadan. You will just love it's amazing texture and flavour both.
With Tomatoes added, it becomes a lovely looking nutritious Curry apt for light Suhoor meals because it's a pre dawn meal and we tend to become a little more choosy.
This is a simple Curry with just 3 main ingredients including the Onions with a few spices available in every pantry.
I personally enjoy this with Phulkas. But let me tell you that it's the best with Rice as well.
Though it's so simple, it's absolutely delicious. Once again I have used Green Eggplants or Brinjal here. The combination with Raw Banana is just awesome.
My family loved it and we had a great Suhoor. Fenugreek Leaves add that perfect touch to this lovely Curry.

In a pan, heat oil and add the ginger-garlic paste, and Green chilies. Saute for a minute and add the rest of the spices. Now add the sliced Onions. Saute until translucent. Next add chopped Tomatoes. Cook until soft and mushy. Next, add the Brinjal pieces. Saute until nicely done. Also, add half of the chopped Coriander Leaves and half a cup of water too.

Cover and cook on a low heat for the next 20-25 minutes. Also add in freshly chopped Fenugreek Leaves just about 5 minutes before taking it off the gas. After done, check for Salt and garnish with more of chopped Coriander Leaves. That's it.

It's all ready to be served with your favourites. Rice and Rotis both go well with this. Enjoy! Yum!
