Mumbai Special Cutting Chai

The name itself is a pure nostalgia for many who are far from their motherland. But for those here in the Country, it's a bliss. Cutting Chai which literally translates to cut into half is a simple Tea with some freshly chopped Ginger and Cardamoms. This idea or concept of such a small proportion of Chai is basically to cut down on the intake of larger proportions of it on a daily basis.
Therefore this Cutting Chai can be had 3 to 4 times per day owing to it's small proportion and hence safer for all.
If fresh one is not available or not handy, Dry Ginger or Sonth can be used instead.
This Tea is practically brewed for a longer time thus making it strong with a dominant flavour of Ginger and Cardamom.
Though it's the best when we have it on the streets from a street hawker or a Chai stall, but still I have tried to whip it up at home keeping in mind all the important tips. So let's get started.

Boil water and sugar until it starts boiling vigorously. To this add crushed Cardamoms and the grated Ginger.

Boil for a further 3-4 minutes with the addition of Tea leaves. And then finally add in the Milk. If you prefer a more strong Tea, then reduce the Milk to one-fourth. Brew on low heat for a few minutes. Strain and serve in special Cutting Chai glasses.

Enjoy it alongside Pakoras and Bhajiyas. Yum! Enjoy!
