We can prepare many different dishes using methi / fresh fenugreek leaves. Usually we use methi leaves to prepare methi pakoda but methi and kela pakoda are different and absolutely delicious. Addition of bananas give a nice taste and flavour. The bitterness of methi and sweetness of banana makes this bhajiya really delicious. This bhajiya tastes equally delicious even when it gets cold!

Ingredients

3 servings
  • 2ripe bananas
  • 1 cupfinely chopped methi (fenugreek leaves)
  • 1 cupbesan
  • 1/4 cupsemolina
  • 1 tspwhole coriander seeds
  • 1 tspsesame seeds
  • 1/4 tspturmeric
  • 1/4 tsphing/ asafoetida
  • 1/2 tspblack pepper powder
  • 1 tspginger paste
  • 1 tspgreen chilli paste
  • 1 tspsugar
  • 2 tbspyoghurt
  • 2 tbspoil
  • Salt to taste
  • 1/4 tspbaking soda
  • Oil to fry

    Wash methi leaves and chop it finely. Mash bananas with the help of a fork. Overripe bananas are best for this recipe.

    Now add all the ingredients except baking soda in a bowl and mix everything well. Now add methi and banana to it and give it a good mix. Add only 1 - 2 tbsp of water as required. If the fenugreek leaves are washed at that time only then you will not need to add any water. Now keep this batter for 4 hours to rest. You can even keep it for 30 minutes and but if you give more resting time, then the result is worth the wait.

    Now add baking soda to the batter and give it a good mix. Heat oil in a pan and small portions to make bhajiya. Fry it at medium heat until golden brown in colour. Prepare all the bhajiya in the same way.

    Serve hot bhajiya along with fried green chillies and onion. This can be even prepared as a side dish along with your main meal.
