
Baigan Tamatar (Aubergine & Tomatoes)
One of mum's go-to recipes.
Steps

Fry onions in oil until brown.

Add garlic, chilli powder, bay leaf, cinnamon, salt and pepper. Add a little water and bring to boil, stirring continuously.

Add tomatoes and boil for 5 minutes.
- 4
Add aubergines and tomato puree. Simmer for approximately 30 minutes until aubergines are tender.
DO NOT OVERCOOK OR THE AUBERGINES WILL DISINTEGRATE.
