Add your flour, baking powder, baking soda, cinnamon and salt to a siever, then sieve.

From this seived flour, extract 1 tablespoon

On a separate bowl add this flour, add raisins and let it sit

Preheat oven at 360 degrees for 15 minutes as you prep

On a separate bowl add brown sugar, caster sugar or granulated sugar (whichever you prefer) and mix

Beat one egg to your sugar and mix. Add one more egg and mix

Add your oil and gradually mix

Finally add flour in portions to this mixture and mix gradually

Add the carrots and mix

Add this contents to a baking tray and put into the oven

Reduce heat to 140 degrees and let it bake until ready
