Steps

Cut the head of the eggplants. Marinate it with salt & sugar for 20 to 30 minutes.

Heat oil in frying pan & fry eggplants well. Keep aside.

Then add cumin powder, turmeric powder, green chillies, salt & sugar in oil. Fry it well. Add a little water & again fry it well. Then add 1/2 cup water in it & boil it. Then add fried baby eggplants with it. Cook it for 5 minutes in medium flame. Now Masala Eggplants ready to be serve. Serve it with Paratha or Puri.
