Ingredients

  1. 8 slicespork belly or other pork cuts
  2. 1 pinchdried wakame seaweed
  3. 1 pinchdried bonito flakes
  4. 4 tablespoonssoft tofu (silken tofu), diced
  5. Cooked noodles or rice as preferred; here, I used rice flour pasta for kids
  6. 1large egg
  7. 1/2tomato, diced small
  8. 1/2Japanese cucumber, thinly sliced

Cooking Instructions

    Wash the cucumber, peel it, slice it thinly, and blanch until slightly soft.

    Boil the sliced pork belly.

  3. 3

    Make the soup by boiling bonito flakes and seaweed until boiling, then add the diced tofu. Remove the bonito flakes before serving.

    Cook the noodles until done.

    Fry the omelet over low heat, spreading it thinly, then add the tomatoes and cook until done.

    Arrange everything in the lunchbox.
