Clean, wash and pat dry the button mushrooms. Clean, wash the chop the veggies

In a microwave friendly bowl take all the veggies and mushrooms. Add salt and turmeric powder. Cook in microwave oven for 5-6 minutes. Allow to cool down.

Heat 2 Tbsp cooking oil. Add ponch phutan and allow to splutter. Mix chopped onion and chopped green chillies, saute till onion is transparent.

Then add ginger and garlic paste, saute till rawness is gone.

Add tomatoes, coriander powder, cumin powder, red chili powder, garam masala and saute on low heat for 2 minutes.

Then mix half a cup of water and the boiled vegetables and mushrooms. Cover and cook for two minutes.

Serve hot with Steamed rice/chapati after garnishing with green coriander leaves and mint leaves.
