Suji or rava dhokla is a soft, fluffy, tempting savoury cake made with rava or semolina, curd and spices. It should be done instantly and no fermentation is needed. Try this delicious dish as a snack or breakfast.

Suji or rava dhokla is a soft, fluffy, tempting savoury cake made with rava or semolina, curd and spices. It should be done instantly and no fermentation is needed. Try this delicious dish as a snack or breakfast.

In a mixing bowl take semolina and curd. Add crushed green chilies and mix well. Add approximately 1 cup water and mix it. Add salt, black pepper powder and chopped coriander leaves. Mix them. Cover with lid and rest for 15-20 minutes. Stir again and add little water if required and make thick batter.

Bring water to boil in steamer or dhokla maker. Grease thali with oil. Now add oil into batter and mix well. Add fruit salt at the center and pour 1 teaspoon water over it to activate fruit salt and rotate in one direction. Batter turns soft and fluffy. Pour immediately in greased thali. (This measurement is for two thalis).Sprinkle some Red chili powder. Steam for 15-20 minutes in steamer.

Then cut into pieces. In a tadka pan heat oil. Add mustard seeds. When crackles add curry leaves and sesame seeds. Pour tadka over dhokla pieces with spoon. Garnish with chopped coriander leaves and enjoy with green chutney.
