Sweet & spicy raw mango chutney (Aam ki launji)
Steps

Wash and peel the mangoes and then slice then into long pieces. Set them aside.

Heat oil in a pan on medium flame. Once the oil is hot add cumin seed, turmeric powder let the sizzle for few seconds.

Then add in cut mango slice and toss to combine well with the seasoning.

Add water and mix well. Cover the pan with lid and let it all cook for around 5 minutes on medium flame.

After 5 minutes the mango piece will be soft. Add garam masala, red chilli powder and salt. Cook for 1-2 minute.

Then add in the sugar and mix well.

At this point, increase the heat and let it all simmer for another minutes or so until the chutney thickness slightly.

Remove pan from heat and allow it to cool. The chutney will thicker more as it cool down

Store aam ki launji in airtight container in your refrigerator. Serve as an accompaniment to indian meals. Also taste great with paratha.
