Healthy and Nutritious Oats and Vegetable Cutlet. Delicious Indian Snack Recipe. They are easy to make, delicious, gluten-free and vegan. A wholesome snack for kids. You can serve the cutlet with a dipping sauce.

In a food processor combine onion, carrot, ginger, green chillies and curry leaves and pulse to make a coarse mixture. Again combine green peas, coriander leaves, green bell pepper and garlic and pulse to make a coarse mixture. You can crush them all together.

Crush the oats slightly in a food processor and add it to a large mixing bowl. Add both the coarsely crushed vegetables.

Add carom seeds, cumin seeds, salt and a tablespoon of water. Combine all the ingredients together to form a non sticky dough like mixture. The cutlet should bind easily. Shape into cutlets.

Heat oil in a non-stick pan. Once the oil is hot, arrange the cutlets in the pan. Do not overcrowd the pan.

Allow the cutlets to turn crisp from one side then flip to the other side. Fry till crisp and golden brown from all sides.

Healthy and Nutritious Oats Vegetable Cutlet is ready. Serve it hot with red chilli sauce, tomato ketchup or green chutney.
