Tzatziki

Tzatziki is a dip or sauce found in the cuisines of Southeast Europe and the Middle East. It is made of yoghurt mixed with cucumbers, garlic, salt, olive oil, lemon juice and herbs such as dill, mint, parsley and thyme. It can be served with starters or as a side dish.

Wash and grate cucumber. Squeeze it lightly with your hand to remove extra moisture. Make it one cup after removing the moisture.

In a bowl add yoghurt, cucumber, lemon juice, olive oil, garlic, salt and dill. Mix everything well. Leave it for 10 minutes so that flavours can develop. Now keep it in the refrigerator until use.

Tzatziki can be served as a dip, sauce or spread with starters or as a side dish.
