Tuscan chicken

Tender chicken thighs in a roasted red pepper cream sauce. I served it with gnocchi but it would work great with pasta as well.

Tender chicken thighs in a roasted red pepper cream sauce. I served it with gnocchi but it would work great with pasta as well.
Cooking Instructions

Drizzle large sauté pan with olive oil and heat over medium high.

Mix all seasonings for chicken together. Season chicken liberally on both sides. 3 to 4 minutes on both sides till golden brown and chicken is fully cooked.

Remove chicken from pan. Sauté onion and garlic over medium heat.

Add onion and garlic to food processor. Add roasted red peppers. Purée thoroughly.

Sauce should be smooth. Strain if necessary. Add sauce back to pan. Add chicken broth and butter.

Cook sauce over medium heat. Add all seasonings for sauce. Cook for 8 to 10 minutes. Taste and re season as necessary.

Add spinach to sauce. Cook another 2 to 3 minutes to wilt spinach. Add heavy cream.

Add 3/4 cup of Parmesan cheese. Add chicken into sauce. Cook another 5 to 7minutes.

Serve over fresh pasta or gnocchi. Garnish with chopped spinach and fresh Parmesan cheese

I'm a great fan of chicken soup as a natural cure for all ills, and I liked the idea of giving it an Italian twist. The original recipe uses cooked shredded chicken, but I didn't have any so I decided to buy a whole chicken, use some meat from that, use the carcass to make my own stock, and freeze whatever I didn't use for the soup.
