Tender chicken thighs in a roasted red pepper cream sauce. I served it with gnocchi but it would work great with pasta as well.

Ingredients

  1. 8boneless skinless chicken thighs
  2. 1 (12 oz)jar roasted red peppers
  3. 1 1/2 cup chicken broth
  4. 2 tbsunsalted butter
  5. 2 cupsfresh spinach plus extra for garnish
  6. 1/4 cuponion chopped
  7. 2. Tbs garlic minced
  8. Olive oil for sautéing
  9. 1/2 cupheavy cream
  10. 1 cup shredded Parmesan cheese plus extra for garnish
  11. Pasta of choice or gnocchi prepared per directions
  12. Seasonings for chicken
  13. 1 tbspaprika
  14. 1/2 tbsonion powder
  15. 1/2 tbsgarlic powder
  16. 2 tspblack pepper
  17. 1 tspsalt
  18. 1/2 tbsdried parsley
  19. Seasonings for sauce
  20. 1 tspblack pepper
  21. 1 tsponion powder
  22. 2 tspgarlic powder
  23. 1 tspsmoked paprika (regular works too)
  24. 1/2 tspsalt
  25. 2 tspdried parsley

Cooking Instructions

    Drizzle large sauté pan with olive oil and heat over medium high.

    Mix all seasonings for chicken together. Season chicken liberally on both sides. 3 to 4 minutes on both sides till golden brown and chicken is fully cooked.

    Remove chicken from pan. Sauté onion and garlic over medium heat.

    Add onion and garlic to food processor. Add roasted red peppers. Purée thoroughly.

    Sauce should be smooth. Strain if necessary. Add sauce back to pan. Add chicken broth and butter.

    Cook sauce over medium heat. Add all seasonings for sauce. Cook for 8 to 10 minutes. Taste and re season as necessary.

    Add spinach to sauce. Cook another 2 to 3 minutes to wilt spinach. Add heavy cream.

    Add 3/4 cup of Parmesan cheese. Add chicken into sauce. Cook another 5 to 7minutes.

    Serve over fresh pasta or gnocchi. Garnish with chopped spinach and fresh Parmesan cheese
