Dahi Bhindi
Delicious Bhindi curry resting on a spicy curd gravy.
Steps

Take thumb size Okra, discard tip and tail. Assemble other ingredients

Take whisked curd, add Besan, turmeric, coriander, red chilli powder, oil, salt and give a good mix.

Keep ready the tempering ingredients.

In moderately heated pan add oil, add Okra, add all spices except salt, mix well and fry gently under medium flame till okra turns soft / cooked.

Then add chopped tomatoes + salt and sauté for 1-2 minutes and keep aside.

In pan add oil, add mentioned tempering whole spices, allow to sizzle for few seconds then add ginger + green chilli and sauté for few seconds, then add the curd mixture and cook under medium flame for 3-4 minutes.

Gradually mixture thickens and starts leaving oil. Add Sugar also. Add 1/2 cup water, mix well and give a nice boil.

Add fried Okra, mix well and cook for 2-3 minutes under medium flame.

Switch off flame, cover and keep in stand by mode for 1-2 minutes, dish is ready.

Serve with roti / paratha and enjoy.
