Ingredients

1 hour simmer, 2 month fermentation
2 people all year
  1. 1Pencil size piece of california oak wood
  2. 1Pencil size piece of Ponderosa Pine wood
  3. 1 CupPompei balsamic vinegar
  4. 1 Cupraw unfiltered organic Bragg apple cider vinegar
  5. 1 Cuppurple grape juice syrup, simmered from 2 pounds fresh grapes or simmered from 2 cups organic grape juice
  6. 1 Cupleftover home made red wine
  7. 1 Pinch (1 gram)wine yeast
  8. Cost: about $4 per quart bottle
  9. Equipment: quart glass bottle with stopper or screwtop

Steps

1 hour simmer, 2 month fermentation
  1. 1

    Mix cup of leftover red wine with cup of Bragg raw unfiltered organic vinegar and pinch of wine yeast, let stand overnight at room temperature to start fermentation. Boil 2 cups purple grapejuice (fresh or bottled) down to one cup. (20 minutes). Cool boiled grape juice below 190F degrees, or vinegar will stop fermenting.

    Pour mix into glass bottle. Top off with Pompei Balsamic Vinegar. Add oak wood and pine wood.

    Put mix in dark pantry or closet at room temperature. Wait two months. Use. When down to last cup, refill again with cup of cooked, cooled and condensed grapejuice syrup. Ferment and add cup of raw vinegar, and cup of leftover wine overnight with pinch of wine yeast. Wait two months. Taste. If exactly the way you want your balsamic vinegar, start second bottle. Enjoy
