One of those out of nowhere inspirations, a total epiphany as I was wondering what recipes to include in the sides chapter of one of my cookbooks

Prepare the open flame charcoal grill with olive oil
- 2
Using wooden skewers soaked in lemon water, Peirce chicken, mango, red bell pepper, pineapple, and red onion
- 3
On the plate with Tajin, sprinkle on some cilantro/parsley mix
- 4
Roll the kabob in the Tajin to coat thoroughly and carefully place onto the grill diagonal on the grates

Grill about 6 minutes until full cooked, carefully turning occasionally as to not burn them, and brushing on bbq sauce when you turn

Brush once more with bbq sauce, squeeze on some lime juice
- 7
Plate on a bed of rice if desired and sprinkle with herb mix to garnish
