Creamy and Spicy Chicken and Chorizo Pasta

Today I was craving something spicy, and some pasta..so I came up with this recipe! I noticed we had some smokey chorizo in the fridge and thought I should definitely use it! And wow, this turned out even better than I wanted it to! Hope you like it!

Today I was craving something spicy, and some pasta..so I came up with this recipe! I noticed we had some smokey chorizo in the fridge and thought I should definitely use it! And wow, this turned out even better than I wanted it to! Hope you like it!

Start off by cutting the chicken breasts in thin, bite size slices. Place them in a bowl and mix in the paprika, cajun seasoning, garlic powder, salt and pepper. I just used my hands to really massage them in. Put it to the side to let it marinate for just a little bit while you prepare the veggie mix.

Chop up your bell pepper, tomatoes, garlic, onion and place them in a blender. You don't want this to be runny, you still want it to have bits, see the pictures below. Once you're happy witht he texture, add some salt and cayenne chilli pepper and mix it in.

Then on medium high heat, place the coconut oil and the veggie mix onto a pan. Leave the vegetables cook for 3-5 minutes mixing it every now and then.

I recommend putting the pasta on to cook in a separate saucepan at this point as then it will be ready around the same time as your chicken and it also saves you some time.

Back to the chicken, turn up the heat to high and add your chicken to the pan. Cook the chicken for about 10 minutes.

Next you will add in the chorizo, and let it cook for another 5 minutes on medium high heat.

To make it creamy, we are going to mix the oatmilk and the flour in a jug and then add it to our chicken on medium heat.

Keep mixing and once its nice and creamy, add as much parmesan cheese as you wish. I added around 1/2 a cup. And that's your chicken done! Move it to the side.

Once your pasta is also ready, you're ready to serve it! Feel free to add some parsley or extra parmesan over it. Enjoy!
