In a bowl take 200 gm All-purpose flour,1 Tsp Refined oil,1/4 Tsp Salt (to taste).Mix all ingredients well and prepare a soft pliable dough,add water as needed. Cover the dough and keep it aside and let it rest for at least 30 minutes.

Next in a Kadhai heat up 2 Tbsp Mustard oil /Refined oil over medium flame. Add in 1 Tbsp ginger garlic paste and saute for half a minute or until raw smell disappears. Add in 1/2 cup chopped Onion and saute for a minute.

Then add 1 cup Chopped Cabbage, 1/2 cup Grated Carrot, 1 Tbsp Vinegar, 1 Tbsp Soya Sauce mix everything well and saute for 2 minutes.

Next add in 200 gm minced chicken,mix well and add 1/2 Tsp Salt give a good stir cook the stuffing for 1-2 minutes, turn off the heat and transfer the stuffing into a bowl.

Don't leave the stuffing in the hot pan once it's done cooking as this can make the chicken dry.
Don't add salt at the beginning as the veggies will leave water and make the stuffing too wet, this can make the momos soggy and folding momos will be tough too.

Knead the dough again for a minute and divide it into small equal portions. Dust some AP flour on a rolling board or rolling surface and roll each portions into thin discs. Roll them from sides and keep the center portion a little thick compared to sides.

Place some prepared stuffing in the center of the wrapper then to give it a potli shape lift the edge from one side and start pleating. Join the plates in the center,press lightly and twist to seal it.

For steaming the momos take some cabbage leaves and cut out the hard center part.Wash and soak them in water for 10-12 minutes.

In a deep pan add 1 cup water and place the soaked cabbage leaves and arrange them like a nest.

Cover the kadhai and preheat in medium to high flame for 10 minutes.

Next place the momos and steam them in batches for 10-12 minutes or until they look little translucent and shiny.

Remove the lid and check them by touching it. If they don’t feel sticky then it means they are cooked.
