Prepare the ingredients. Mix lemon juice, oil, garlic, paprika, salt, and pepper. Divide the marinade into two parts.

In a bowl, mix the vegetables and add half of the marinade. Stir well. In another bowl, coat the chicken with the other half of the marinade. Let both sit for 30 minutes.

Preheat the air fryer to 400°F (200°C). Spray the rack with cooking spray and place the vegetables and chicken on it. Cook in the air fryer for 25 to 30 minutes, stirring the vegetables and turning the chicken after 10 minutes. When the chicken is cooked and the vegetables are golden, it's ready to enjoy.

This is a complete dish, but if you want something extra, you can serve it with salad, rice, or whatever you prefer.
