Mash the Boiled potatoes. add some salt together in the mixture

Finely chopped onions

Keep all the chutneys ready in advance

Beat the Curd add sugar and salt optional

Now assemble the Puri
Krack the holes fill the potatoes, chutneys one after other add dahi, onion and sprinkle salt, chat masala and lastly Sev over the puris
